What according to you should be the number of triangles in models and assets for the environment? Is the present day times, you have to pay attention to the number (of course within the limits reason). If so, what limits should oscillate? I would add that I mean the third-person game.

Short answer:
It varies dependent on the engine.
Long:
I hear it usually doesn't matter now a days, though you still should use caution not to go -full retard- and dump useless details / geo / lines on objects to achieve your results.
A good balance of enough for each view to look nice would suffice, again dependent on the engine.
On the wiki also are some what recent triangle counts for the current consoles and PC environments.
