Hey, does anybody know how to paint on just one channel a Color at Vertices map in XSI? seems like it should be simple, but I can't find information on it anywhere
being able to paint like this is really important for environment art / foliage.
If this is for some reason not possible what 3D app do you guys use to paint vertex color for foliage?

It's been a while since I've looked into the vertex painting tools. If it doesn't give you individual access to each channel, then I imagine you could instead paint 3 individual B&W CAV maps (named R,G, and B ), combine these lookup nodes together with an RGBA_Combine, and then use Rendermap to transfer the result into a new CAV property. It'll take about a minute to set up, but once it is going it becomes pretty quick to switch between channels.
