Does my camera need something to track it's own position in space? I'm about to use a digital camera, but it does not have a gyroscope or anything like that. I imagine not but I just want to be sure.

No, nothing to do with photogrammetry, but you would basically create UVs for the mesh how you like, and then bake the old mesh and textures to your new UVs.
