I have been working on the model for a little while new and think I need some solid feedback. I still feel like a novice here as I am mostly learning the techniques as I go. I ask that if you do have any suggestions that you would please ELI5 with jargon or methods. I've been a lurker for a long time but hope that with this thread to regularly update with changes or improvements.

I also ran into some issues when trying to figure out retopology. I decimated the model to bring him down to about 300k points and then exported him into 3d coat. I then tried to import as AUTO PO and nothing seemed to happen after I went through the masking and drawing guidelines steps. Not sure what went wrong but ill be messing with it again.
Do you have a concept you are working from? Quite hard to properly critique it without something to reference it against.
That said, I feel like you're trying to jump into the deep end, as an admitted novice, you should try to paddle first. I would start again and maybe produce a bust/portrait, forget the body, forget retopology tools, just use dynamesh/zremesher. The face is by far the most important aspect of any character and it pays to get it nailed down. Study planar face reference and produce a solid bust, try to understand the proportions of the face from every angle. Start at a low poly count, get as much detail as possible at each level, then subdivide.
I revisited this and have some updates. Honestly I still feel like I'm struggling. Id love to have a mentor or something that I could get more hands on advice from if anyone knows of a way to go about that.
There a concept for this? We'd like to see it so we can give you proper critique and direction. If there isn't then that is your problem and why you feel lost.
Started over and im happy with how he is looking now! Still wanna add details to the abs, ears and refine the area around the edge of the lips if I can. Still not sure how to make the hair. The hair I had made before looked haphazardly thrown together and I had issues when I went in to retopologize it.
