Hi, when applying to positions in game companies, I would think they prefer to see the low poly mesh with baked textures rendered in marmoset or sketchfab right? Is the high poly key shot beauty render even that important to show them?

Generally, they prefer game models rendered in a game engine. Marmoset & sketchfab are good alternatives, but they are especially great for embedding in a portfolio. Just make sure you have JPG fallbacks as well, since some browse with script blockers.
Highpoly models can be rendered anywhere, as long as the lighting is good enough to show off the forms.
