Need help with modern average Poly count for a game.

By polys, I mean triangles

Creating a large persistent world with that many players is a massive undertaking, you will have to dig deep into Unity code to make it work.
I would suggest looking closely at DayZ for resolution ideas. We have some triangle count info here.

To make the game work on multiple spec machines, and also to support seeing far distances, you'll need to make LODs. Both geometry and shader LODs.
