I assume it's done with a lot of texture atlases and multiple uv's for the normals vs. the wear and tear?
Just one UV channel, materials are fairly simple - most of them are tiling, though the white/grey painted panels are a sheet of about 10 different panel types that I map manually on areas to create interesting paneling. The thrusters, fuel tanks, maneuvering thrusters and hangar bay doors have baked normals but the rest is just on the model or nDo2'd.
Additionally I have a few alpha plane materials for the ident decals, spotlight shapes and the little red/blue dot lights.
