I'm looking at creating a large passenger liner for a
University game project; it will be a large exterior model (no interior) and I’m
aiming for the photo-realism graphical style. It will act as the level and the player can navigate around. I would love some guidance on the recommended Poly-count and texture maps, it would be much appreciated! This will be implemented in Unity 5.

Back on subject, like Mirbobo stated, this question is very loaded, especially with todays wild ranging platforms, from underpowered cheap smartphones to overpowered desktops. It's best to state your targets first then we can give you better guidance.
