Modelers who do Modular Characters/Animals

I am studying Modular Modeling methods, their efficiency, drawbacks, etc etc. I have learned a lot how useful the method is for house models and environments but I want to look into how Modelers tackle it with organic models, like Human characters or animals. Its easy to see how it would be done with animals like centipedes and spiders, but I know it can be done with Human Characters and I was wondering if anyone knew of any places or articles that goes into that, how Modelers tackle with it? Maybe not specificly human characters, organic models in general would be of great interest to read as well.

Now this is an interesting read. Thanks! I think it helps giving me a general idea how modular characters work.
