I am not much of a modeller so no advice there. However, you did not bake a normal map from a high poly. Other modellers may correct me, but you should create a normal map 99% of the time ^^.
Your texturing workflow is something I can comment on though. Pasting pictures onto a UV map won't get you very far. Try to learn more about texture theory and PBR by going to the following websites:
These videos are old and although a lot of people still love photoshop, I tend to use a combination of photoshop and Quixel Suite which work perfectly together. But, you might want to get used to pure photoshop first. ^^
I added a normal map after this video adding in the detail for the wood but beyond that I didn't see the point of doing high poly then baking down as we are aiming for a simple cartoony feel. It does also have a specular map on, but I did that and the normal map later onon.
I am extremely new at this and could be wrong so any input is valued.
My texturing definitely needs work I agree. Thank you for those links I will have a look and try to improve!
