Why my cartoon models on ZBrush look so sloppy/jaggy?

I've tried several tips... like to model on lower subD. If I use the Smooth brush, I lose all my details.
That doesn't seem to work for me, my cartoons whom should be organic, always get wavy.
For something more realistic I can go fine as far as my skill allows.
I've watched several GumRoad lessons but I'm stuck.
What am I missing?
