You should animate your character with full armor, so you can check for mesh intersections. Like shoulder pads going trough the character head when he lift his arms, or stuff like this.
Then, check for the pieces that you think can cause trouble.
After your animations is complete, I advise to test the most "different" pieces of armor on you character, parent and run some animations to see if everything is in order.
If your armor sits between animated joints, you gonna need to skin those.
