FF8 Shiva update to todays art standards

Hello all, I'm relatively new to this forum. This is my first post. I'm working on a updating the PS1 Final Fantasy 8 Shiva Summon/Guardian Force to something that could be used in a game today. Here are some of the WIPs so far. I'm currently in the process now of going from the high poly to low poly before i really go to town sculpting details.

QUESTION:
What is the best way to transition in the low poly from a dense poly area such as the face, to a lower poly area like the rest of the body when I cant disconnect the head from the body?
