This may sound rather silly, but I'm wondering if it's crucial that I must create 3d models based after someone else's concept art if say I wanted to gain employment for a company. Sometimes I just can't find a concept that I really feel passionate about modeling. Also, if I conceptualize a model myself, the work feels more rewarding especially if the model looks kick ass. When someone compliments my work it feels like a reflection on me as an artist and not "Oh hey you know how to use Zbrush good job." I know it's important that I should work from a concept since this is what I would be doing on the job anyway and working on borrowed concept art would save me a lot of time. However, I feel much more inclined to work on projects which I've conceptualized myself instead.
Do employers especially care to see this? Or do they just want to see a bad ass portfolio full of awesome work regardless if concepts were borrowed or not? Is the opposite also true? Would employers want to see models conceptualized by you as well?

If you feel like you are good enough to make kickass concepts and model them just go for it.
However, if you are still a beginner your concepting skills may not be as good as your modelling skill and you'll end up with a mediocre model even though you can do better. That's why "borrowing" a concept art can be a very good idea.
This. If you can make amazing 3d art without concept then that's a great idea. But that's quite a tough skill to master.
