Been recently let go from my first "game " job and I feel like my portfolio isn't up to snuff. I was hoping for a critique for what I should include and what I should work on.

You might want to put your drawings and 3d stuff on separate pages, or perhaps in different portfolios altogether, one for concept art, and another for character art. At any rate make sure you make your contact info very noticeable, I had a hard time noticing it.
Should have a menu bar links for Homepage, 3D, drawings and about me. If you keep the text at the top left aligned as it is your email/contact info should go on the right. Right now it looks like a plain HTML website with no CSS at all.
I also feel that if as you said you might be better served by making some models and textures now at home while you have no job that can show off what you can do without the restrictions you had in place there.
