Hi. I started this environment as a learning project. I never done any medieval environments before, so I started with one room.
Software used: Blender, UDK, Photoshop, XNormal, nDo.
Here are some references I gathered.

I started from blocking out base form with BSP brushes.

Then I made highpoly models for tiles. Also I made non-tiled versions for better details.
Here is day1 progress

Some assets:
Highpoly shield
Highpoly wall
Highpoly wooden planks
Because I used to non-PBR workflow and this environment has stylized look - for this UDK fits pretty well.
I made some things in UE4 and of course eventually switch completely, but for now I stick with UDK.
Changed flags texture also finished stairs
I think your walls look to neat compared to your references. The reference has very rounded bricks, yours are very straight and aligned. Maybe creating a more random texture may fit this room better?
