hey, you should honestly make a dev-thread with all your stuff at the same place, its easier for both you and us to follow. and also screenshots, much easier to get an overview on what your doing, the videos are great for youtube but isnt really working on a forum, its not likely that someone is gonna watch through a youtube video just to give you critique on a model.
I think your biggest problem is that what you render in blender and what you end up with in unity looks completely different. what you have inside of unity is not really that impressive, it looks like a rush job, but your video thumbnails actually looks pretty good.
I think the reason you dont like the large one is simply because how it looks in unity, all the details get washed out with that shading. I would really give it another go and try to replicate the look you have in your thumbnails, inside Unity.

And no I don't like the elephant because it has no wow factor, it should look old and over grown. Instead, it looks like I placed a tree on it and went on my xD
