You could duplicate your object, store a morph target, sculpt in your dirt then under morph target create a difference mesh, then append that back into your main file.
What do you mean paint? You mean Polypaint? Polypaint can't be a subtool. What you can do is paint on layers. Add a layer in the Layer submenu, make sure REC is activated, paint, and when you're done click the REC button to turn off recording of that layer. Then you can adjust the slider to change the opacity or even turn it off completely.
If you mean sculpting, then if you want to add detail the way Fwap said or you can try the new nanomesh feature.
Count Vertsalot - I mean literally paint 3d dirt/soil on a mesh, so the dirt is not a part of the base mesh
I can add zsketch , but that doesn't really give me the effect I am after
