You don't need to do anything in the modeling and unwrapping phases as both teams need to use the same geometry. Afterwards, you have 2 options which can be combined. Either way, you need to select "Specific Team" instead of "All Team" in the item importer.
1) You can create a separate color texture for each team. Normal maps etc. are shared among all teams.
2) You can assign separate paint colors(Color Tint Base in the VMT editor) for each team if your item supports paintability.
