Low Poly Workflow with no Normals

Hello, so I am working on this really low poly building I quickly whipped up and quickly UV'd but the 3DO won't display it... I have hoped to be able to at least see it there before I bake the AO and ID maps (painted them by hand using hard edged masks in photoshop) however I am wonder if anything will even yield a result if no Normal or AO map is created. I have having issues baking the AO map as the piece is composed of several objects crashing in each other and then all of it combined together.

Is there a workflow for creating simplistic objects without the use of Normals? Like say a cylinder that is ment to look like a barrel for example. Was hoping for a hand painted cartoony look to hopefully be generated off some megascans material. If not then I may just end up doing it by hand as it is not ment to be some elaborate piece and will only be shown in a glimpse.
