Trouble recreating RIME artstyle

Pardon the noobish question but how would I go about recreating the style of RIME.

It seemed simple enough to create but when I tried in UE4 it turned out looking terrible. Here is the result of a few quick test runs:x4lrhg.jpg

I really like the way their rocks/cliffs/and water are done but I can't seem to replicate it. Either my stuff is too bland or too noisy.

I've looked through all of the UE4 content example and free content for anything with a similar style but couldn't find anything.

What do you think the RIME maps look like? Solid color with little bit of shading and lighting taking care of the rest?
What would be your process for creating something like this?
What maps would you use and how would your materials be set up?

I would be grateful for any information/critiques you guy can provide.
