Whenever I create a new material, the final node has some stuff with white text while the other stuff is grayed out. How do I activate the grayed out options?

This is all easily found in the official documentation:

It depends on your surface shader.

the other inputs are enabled or disabled depending on what type of surface you have defined in the material properties.
