If you are talking about turning it off with an item which is imported with the in-game importer, you untick "head" in the bodygroup part here when Pyro class is selected:
I know about that one. I should have clarified, that I need to disable it in itemtest. I guess I could always load up SFM and do it that way though, it is easier to view things in there anyway.
I am looking to do something similar. I have a head replacement model for the sniper. It is a very different shape than the sniper's head model and would need to override the default model.
