I once recorded myself in zbrush, i can't remember the 'ins and out but you basically create a script and zbrush interpret this as a recording that you can watch later.
The video you linked isn't a timelapse. It's "Fhistory". Forward History recording essentially goes through all of your actions saved in your zBrush history, and creates a recording out of it showing your process. Example below.
You can change the camera options to completely stop movement, move only the model, etc. It's pretty diverse, and I'm a big fan. Especially since every time I try out a time-lapse, I screw up what I'm doing! Hah.
