This is my first environment I'm doing solo for some practice. Never really was to confident in my texturing abilities so I'm hoping I can get some advice as I go along with this project.
I'm not sure if I should be going to texturing now or if I should start modeling the smaller details first.
My advice to you would be to stop and think. You do not understand properly the concept of high-poly modelling, and you admit yourself you are not confident on texturing. Do you really think that this is a skill set that allows you to work on a portfolio? Browse polycount, watch some tutorials, make a whole bunch of models before you even think about making a portfolio.

Yea. I'd say put this project on hold for a minute and try something WAY smaller out. Like maybe a prop or something that fits the style.
Your high-poly is already headed in the wrong direction. Don't set yourself up for failure!!
If you work on something small the chances of fixing any problem will probably be much higher.
Then, when you understand basic modeling/texturing, you'll be able to kick-ass on this env!!
Why are you building a portfolio before you learn the basics of something like normal mapping? It seems to me like you might be getting ahead of yourself.
@AlexCatMasterSupreme - I hear ya, I'm gonna try out the energy cell thing that you had posted for this months challenge. Still probably a little out of my range but go big or go home I guess haha

Your edges are way too tight, is it even being smoothed?
If this is your first time baking, I'd recommend a simple object like a knife to get familiarised with the workflow. Try this http://www.polycount.com/forum/showthread.php?t=118043
I think I'm going to do a few crates with different levels of detail and definitely look up more tutorials and theory.
Thanks for steering me in the right direction!
