Padding at least 16.You cant really avoid the mipmapping unless you disable it manually for your texture in the engine I think. Seams? Texturing seams, or normalmap seams?
With 16 texels padding 4 Mips will be seamless. This is usually sufficient as long as your UV chunks and background are not totally different in brightness and color. So bake at 4096²px with 32px padding.
