Zbrush: Working in symmetry and then pose, or vise versa?

Hello everyone! I have been viewing this forum for some time now, but this is my first post. I suppose you could say I am a newbie in 3D modeling, although I have been doing it for over a year. My question, however, might contradict any of my experience since it is so.. simple.

When it comes to complex poses in 3D models, which are NOT meant to be animated, is it better to build the model symmetrically and then pose it, or start from a posed zsphere and go from there?

I have always been doing it symmetrically, especially because I work on game models and I understand why symmetry and/or standart pose is important for animation/ UVs. But what if the model is just a high poly sculpture? The reason I am asking is because I've seen people do it that way, and I wondered why.
