When modeling this is really easy, just select the edges and scale to 0, but in the uv editor scaling edges flattens them against each other, same with the vertical/horizontal align tools. This can be a real time sink on meshes where there are tris and you can't rely on the Straighten Selection tool.
The only way I've found to do this is to use the textools UV-to-3D feature to convert the uvs, scale to zero, and convert back, but maybe there's a better way?
