Projection really isn't super friendly. You're almost always going to lose something. Try projecting one-two subdivisions at a time, instead of going right for the highest one. You can also mask or hide areas you don't want projected and work on different bits separately.
You may also want to try using xNormal for baking. I used to use projection for everything, but xnormal is pretty easy to use and achieve similar (if not better) results, you'll even be able to project your polypaint to your lowpoly's texture. Projection can be a handy tool to know, but for regular baking in your workflows xnormal should do the job nicely.
