I just knew I had to choose some of the zelda games which I love, I really wanted to do something with Majoras Mask but the scene where you fight phantom Ganon as a boss in Ocarina of Time is just a too good memory for me so, thats my choosing.
As I'm mainly just a 2D artist and have done like, 3 really crappy low poly characters in my life I'm gonna try to keep things as simple as possible for me and just gonna try and do my best at the texturing! Hopefully things work out because I really wanna finish this in time.
Here is my first sketch of the idea,

Awesome choice for a diorama. Good luck with it dude, the sketches are nice.

Good luck!
and since I had so much trouble with this, mostly unwraping it I think, I'm scared for doing ganondorf and his horse my god

Also I'm loving Link's facial expression. Made my day.
forgot to mention that Link is at 444 tris if anyone was curious
prob gonna start at the environment next, also finish Links texture in between!
I'm sure there are things similar to roadkill for mac though if you poke around a bit.
finished navi and a lot of the stage, so will post that soon!
but heres more of link, and unfinished textures on shield and sword
I didnt quite figure out how to put different textures on different things on sketchfab,
but here is the scene anyways! without textures

doing such low ress on the environment really makes it super pixelated
so next up is phantom ganon!
I guess I never commented on this. I really loved your initial sketch and it looks like it's coming along beautifully in the model. Personally I liked the face in the sketch more than the one you have on the model. The features on the model are spaced out too evenly and end up coming off kind of boring whereas the face has a bit more interest. Seems minor, but faces are oh-so-important.
Also, are you planning on turning the texture filtering off? I find it helps unite the lower pixel density objects with the higher (that is Link will sit better in the environment).
and you are right about the face, I personally really liked it a lot more on the sketch swell, but I could never get the same feel on the model.. but redo and do right
what is texture filtering? As I mentioned before this is like my third model ever so, haha
Using unfiltered rendering will make the textures in your scene "pixel-perfect". That is, you'll be able to see each individual pixel in your texture instead of them being blended together. You can see that blending happening most notably on the edges of the triforce on the ground.
