I'm trying to model a series of lesser known World War 2 weapons mostly submachine guns at the moment, the hardest part I find to model are the receivers depending on how complex the weapon is though, I have a history of not being able to "finish" models which I'm trying to get rid of. I often end up stuck on a model not knowing how to model a certain part etc and just give up on it, Any tips on modelling weapons would be awesome! thanks.
Italian Carcano 1938 Bolt Action Carbine
United States M1a1 Thompson Submachine gun Subdivision surface modifier applied
That's true the PPSH and the Thompson are quite common. I modelled the Thompson way before the other weapons. I did the PPSH because it looked like a simple weapon to model... I'm going to add detail to the other models now.
I have never seen the Carcano, Beretta Model 38, Schmeisser MP41, Schmeisser MP35 or the M50 Reising in any WW2 video game. Yes the Thompson and PPSH are common but they are only two of the models. I can't change the title of this topic so deal with it.

Carcano - Medal of Honor Allied Assault: Breakthrough, Call of Duty 2: Big Red One
Beretta Model 38 - Medal of Honor Allied Assault: Breakthrough, Call of Duty 2: Big Red One
M50 Reising - Medal of Honor Pacific Assault
MP41 - Red Orchestra: Ostfront 41-45
Never played any of the games listed. Whether the weapons have appeared in countless video games, films or whatever is irrelevant. I worked hard on them and that's what matters to me.
I'd like to make low poly versions. I'd probably just remove the subdivision modifier and delete the supporting edges. But whenever I try and bake the normals and AO maps they turn out pretty bad. I normally use Xnormal to bake them but if that doesn't work I use Blender's baking tools. But everytime things turn out ugly seams and artifacts etc. I have yet to master that aspect of 3D art unfortunately.

Especially i like the lighting, it's soft and makes those models stand out.
Absolutely
