while you can do it using the HUD and Canvas class, most UDK games use flash/scaleform these days. Search the Epic/UDK forums for scaleform beginner/intro tutorials. Additionally, if you don't have flash access or you want to try and do it all within Uscript/kismet you could use SimpleEXTHud..which I think is on the Hourences site. It's limited in what kinds of things you can do, but it's pretty straightforward.
