    Whether or not a project was finished is not terribly important (assuming you have secured permission to show work from it publicly); forces outside of your control are usually responsible for determining if a project sees itself to the end. What is important is the quality of the work. Your self critique of " ...the lighting could use work, no post-process effects, and there is a banding effect on the terrain shadows." indicates this work should not go into your portfolio. Remember, only show your best work.
