quake II and III. realizing i could make my own characters for quake II was a big deal and it lead me to polycount aka q2pmp. i worked on a quake II mod, and then i made a model for quake III which helped me get my first job in games.
Not a game, but its what heavely influenced me to get into the "3dmodeling" industry. I dont say games cause really, I never thought games was a industry to get into. I liked playing games, but I cannot think of any games that influenced me decision to get into the game industry. The company I work for, I applied for it because the art matched the art work that I liked to do and my skill set. I just wanted to make 3d art, and games just so happends to be apart of that ")
I've been playing games almost all of my life. Started on Atari 2600 (I'm that old), and moved to NES, SNES, etc. Super Mario Bros and Legend of Zelda really spoke to me. I've always held games in the same regard as movies, or any other entertainment medium after those.
But as far as knowing I wanted to make game art for a career I'd have to say Ratchet & Clank 1. The minute I loaded that up on my PS2 I was blown away. Not sure what about it that really got me. But I was hooked. My career goal was to work on a Ratchet game. Really happy that I had that chance.
Probably Sonic the Hedgehog and other platformers for Mega-Drive, since the first game I tried to design was a 2d platformer filled with 'radical' animal characters when I was about 10.

This except on the code side. Realising I could change the way the game worked led me to tinker with it, then one thing led to another...
Ratchet and Clank, specifically the Insomniac museum. As a kid walking around in that cemented the idea that I wanted to make games.
Psychonauts and the Jak and Daxter series were also huge influences.
