If Obsidian tried to make a direct follow-up sequel to Torment, I'd probably have to burn the studio down myself. Another game in the Planescape universe would be ok, if they could get the rights, but I think even then I'd be a little leery as they'd feel compelled to have characters and elements crossing over from the previous game. Torment should be considered a closed book.
Project Eternity is the way to do it - take the things that Torment did well and blend them into an entirely new IP.
For me, I'd like to see Tom Hall get the Anachronox rights back so that he can finally finish off the story that has been scripted since the first game was developed.
I'm also hanging out for the Beyond Good and Evil sequel, but I have a reasonable amount of faith that that will still happen eventually - Ubisoft keep saying it will year after year.

I want to say Team Fortress 3 but how would they go about it. TF2 is pretty much perfect imo. Well balanced even with all the classes and variety of weapons. Plenty of game modes and the characters and humour is spot on.
I'd like to see a TF3 but I very much doubt it'll be as good. Like all counter strikes since source I spose... Anyhoo, they probably aren't going to touch TF2 for a good few years while its still making heaps of cash.

Imo a remake would probably ruin it. Nothing wrong with the game anyway, still fully playable. Human Revolution was pretty damn close to reaching Deus Ex's level of awesomeness.
