What would be the best way to change the color of a texture? I made a tiling brick texture to match the tan color of Maria Laach Abbey but I want to use the same texture in a different color for the darker brick trims. Hue/Sat washes it out before I get it as dark as I want it and I can't seem to recover contrast w/o bringing back too much color.

You could desaturate it and overlay (or other blend mode) to a base color. Or you can overlay the base color to the desaturated texture.
You could use gradient maps, maybe pick 3 colors.
You could go into image>adjustments>variations (I personally dont like this).
You could also play with color balance.
as your awesome photoref sucks i cannot tell if it will help in your case
Then when matching, change your RGB sliders to HSB and start by matching the Hue value - then move on to saturation and lightness.
If highlights and shadows also has to be matched or tweaked, use a Levels layer or a Selected Color -layer
