I was just curious because there seems to be a big debate over how we should render our final, as it stands right now with the way our coarse is set up, we will be rendering in udk making low poly game type models. (environments are 200-500k triangles and characters are within 15-20k) Is this a concern that we are making low poly stuff and rendering in UDK rather than having high poly maya render for getting a job?

Well those people were wrong. If you want to make environments, stick to UDK/other game engines, Rendering enviros in maya is a big nono. Also its alot easier to work with environments in an engine than in your 3d-package.
I don't even understand where does this statement come from. If you want to do game art, showing your art in a game engine is just a logical choice...
For items like your high poly assets that you are only using for baking, if you want to include those in your folio as well as the game rez assets you can render these out in Maya. It should be noted that these are FAR less important than your game rez assets that should be textured. These renders just show you can do high poly work as well as game rez assets.
