@pmiller001 Retro so far hasn't revealed what they're working on yet for the Switch so we can just hope they will make a third DKC game because I want one too, and I want them to make a trilogy just like RARE did. I bought a Wii U just for DKCTF, so yeah.
You should mention what platform/specs are you aiming for. Low poly can mean anything from mobile phones, current gen consoles, PC or the really retro stuff (PS1 or Nintendo DS). And if you're following a PBR/AAA workflow, you'll still need to model a High Poly version to save the normal maps info from.

Were going through the hi-poly to low - poly baking process in class on a retro coke machine so i figure ill keep this project running at the same pace. And i'm definitely planing on texturing it damaged an beat up, there'd be no fun in leaving it nice and clean haha

Do you mean more of the retro titles? I'm kinda the opposite... I bought a Wii-U last year for Monster Hunter and enjoyed some of the Mario games (Mario Kart and Captain Toad is cool too,) but am considering selling it soon. The tram looks good, and the aesthetic of the scifi parts with the retro hull is amazing. I think you can push the texturing further, as Maxilator said the glass does not read as glass currently. And I think it is too clean for being a car in use. I think some commercial signs on it and show of usage would be really cool.
