That's the easiest way. It's a common thing to do but it would be more efficient if you just used the one material. You could possibly just attach the pieces as static mesh to sockets on the skeleton. But this wouldn't work if you need the pieces to bend in any way. I use Red9 Animation Tools on custom rigs and on Advance Skeleton. Basically it puts an attribute, onto a controller that tells it how to mirror. Red9 also has a pose library that is really handy. I also highly recommend Advance Skeleton, it creates high quality biped and quadruped rigs, its very flexible.
I'd look for animal references to get believable anatomy (Gorilla for body, I suppose?). Is it to be animated? Yea getting good reference for a giraffe is a bitch, as we both know. I couldn't find any detailed pictures or drawings of a giraffe skeleton no matter how hard I looked.
