I would use a box subdivided into a sphere, plus a Spherify step to insure it's a perfect sphere shape. Then lay out the UVs as you would for a box. -

How are you going about your unwrapping/packing? This is one of the most vital steps in the workflow. It looks like you haven't unwrapped the mesh properly. -

You could also make a tile with a single repeat on both axes just slightly larger than the camera range and position it to follow the camera in steps. -
