I really think you did well matching the colors, but it will probably be impossible match the exact look unless you match the lighting. I think the scene looks really clean, which could be a good thing if its what you were intending... but I think you were going more for the look of the painting.

thanks guys really great advice so i pegged it back a bit and changed the pose to a more natural looking one with less strain on the shoulders i intend to continue to tweak until im happy then im going to retop it so the detailed sculpting can begin , any more thoughts would be greatly appreciated :)

A specular map is not a map you can bake. You'll need to create your spec map manually alongside your diffuse texture in order to define your intended material. If you use texturing software like DDO or Substance Painter, the specular map may be generated for you when you use material presets.
For me it really depends on the intended use of the rock. my plan for my current distraction/project is to take some of the meshes I've made, put them together in ZB and repaint, then bring out as one and retopo.
