Many engines I know of rather prefer however single materials per mesh or even environment. Its way faster as you can batch render calls (less tetxture swaps or non ideally) but it might require sometimes a texture atlas. For an individual asset, generally it is best to avoid too many intersections or floating elements, and instead merge everything together in the low poly. This may mean a slightly higher poly count, but it will be more efficient uvs (less space devoted to areas that are hidden inside intersections, etc) and less aliasing… -

Back when I left university I was in the same experience but after working with UDK for a year and getting some projects out there I managed to snag a job at a small company because they saw I had UDK experience and they needed it. After finishing with them I went back on the search and I've applied to tons of companies…
