press n and change shading to multitexture and press alt z. If you have glsl enabled instead of multitexture, make a material, assign it to the model, add your texture to the model and then enable shadeless.

I've seen that in a few models, actually; sandwiching the point bits like knees 'n' elbows. Does it just make the deformation smoother? Or are the added verts utilized for some weight-painting trickery?
Gradient maps for the win. AVOID using multiply with a black n white AO, especially when texturing skin. It's good to get into the habit of changing your AO colours with a gradient map etc.
