The awesome one, because it is awesome and the other is merely decent. Using a lot of tiling textures does not necessarily mean they are efficient or good tiling textures. Though really, one sentence is not enough to make such a judgment call on.
You don't necessarily need to cut it out of the original head mesh. Create a separate object(s) for the hair, get it how you want it to look, and then either leave it separate or cut and merge it into the head mesh.
A Dance with Dragons is merely the fifth book - the last will be the seventh one, A Dream of Spring (with The Winds of Winter inbetween). It might take another ten years, based on how much time was spent on number 4 and 5...

That stone wall texture is pretty damn impressive. Great work! Are you planning on sticking religiously to the original model, as you have permission from the creators? Or are you merely going to use the full thing as 'inspiration'?
You could try to make a secondary object in your 3D package that has some special form or rotated in a way that it looks properly in the reflection. Then remove it, make another render and merge the two pictures in Photoshop. :)
