I agree, without that indent-y bit it would be quite uncomfortable to ride, especially over long distances (which is implied by the packs and stuff on the back)
Hi, this problem is most likely due to mismatching transforms. For baking use +X for R, +Z for G and -Y for B and make sure the object you use doesnt have any transforms.

The meshes look clean and neat ! The unity scene looks too bloom-y imo. More color variations in the albedos would be cool but i gues this is only the beginning so....keep up ;)
