You can also use the offset transform type-in in the unwrap mod ecitor. -

Just double tap to the head, the body would still be meat and not transformed to Zombie. -

That model is just using posable symmetry, you can see it in the Transform menu. -

Make sure your object isnt in a group. Freeze the transforms. Delete the history. -
