I don't mean to piss in his pocket.. But rracer's tutorials are quite possibly my favourite. Inparticular his AK-47 one, not only for the awesome skills I learned, but also because of the popcorn, pandas etc:-
The Joan of Arc tutorial is still hands down my favourite for getting a good handle on character modeling. Also, Scott Spencer's ZBrush anatomy book is absolutely awesome. It's not really a 'how to use ZBrush' but more of a 'how to sculpt great anatomy in ZBrush. The DVD that comes with it is great too.…
The Eat3d Old Damaged Pillar! I learn so much from that DVD, it made unwrapping a non-issue for me. I was really struggling with that at the time. Thanks Riki!
