For environment modeling you will want to be able to quickly block out the necessary shapes and snap points to the grid or along another meshes. daz or iclone (IIRC) is probably fine for this. In daz check the store for body morphs (the official one from daz) and you can make bodybuilder proportions like that which would probably be sufficient.
