I like the concepts. Anymore I don't think any specific polycount can be 'best' for a portfolio. I think it's more of what you're aiming at the piece being for. There are jaw dropping models in the low-poly thread at under 500. On the far end of the spectrum you could go 100,000 for a high poly to bake or for cinematics. I… -

hmmmmm i already felt the commercial ones where you can print your 3d models for 200-500 ( http://www.3darttopart.com/ )dollars are still to crude and small scale ... so the home brew variant would naturally be even less precise. so i am not yet jumping on the bandwagon yet but i really could see this take of in the future… -

You can also try to model a builduing in different mesh resolutions. As an environment artist you have to be able to model LOD (level of detail) models. So try to model a building with 15000, 5000 and 1000 Triangles, don´t use different materials for the LODs and try to keep close as possible to the high resolution mesh. -

I'd suggest just hand painting out the issues you're having. Once you let go of the idea that a bake has to be "perfect" your workflow decreases big time.
