With Maya 2009. just open any tool's settings and choose the preserve UVs option. To do the same in pre 2009 versions use a transfer attribute node ( mesh > transfer attributes > UVs ) I still prefer transfer attribute method as it allows fer some uv fun same with a blend utility ( morph hack )… -
